Apple Streusel Muffins

These are great to make ahead and stick in the freezer. Pull them out one at a time and nuke them for a few seconds to warm. Mmmm, instant breakfast!


Ingredients:
2 C flour
1 C sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 eggs
1/2 C butter, melted
1 1/4 teaspoons vanilla
1 1/2 C chopped peeled apples

Streusel Topping:
1/3 C packed brown sugar
1 tablespoon flour
1/8 teaspoon ground cinnamon
1 tablespoon cold butter

Glaze:
1 1/2 C powdered sugar
1-2 tablespoons milk
1 teaspoon butter, melted
1/4 teaspoon vanilla
1/8 teaspoon salt

Directions:
In a bowl combine flour, sugar, baking powder, baking soda, and salt. In another bowl, whisk the eggs, butter, and vanilla; stir into dry ingredients just until moistened. (Batter will be stiff). Fold in apples.

Fill greased or paper lined muffin cups 3/4 full. In a small bowl, combine brown sugar, flour, and cinnamon; cut in butter until crumbly. Sprinkle over batter.

Bake at 375 degrees for 15-20 minutes or until toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack to cool completely. Combine glaze ingredients; drizzle over muffins.

Makes 1 dozen.

*I doubled the batch of streusel. I filled the muffin cups 1/2 full with batter, then sprinkled a bit of the streusel inside, and topped with more batter to give them a little more sweetness inside.
