Ingredients:
1 pkg boneless leg quarters; cooked & cut up
(or 1lb ground beef)
1 can cream of mushroom soup
1 can cream of chicken soup
1 8oz bag mexi-blend cheese
1 can Rotel tomatoes
1 pack 10 inch flour tortillas
Cook chicken/beef; drain. Turn off heat. Add Rotel and soups to meat; stir until combined. Put a small amount of meat mixture on bottom of 8x8 baking dish. Layer a flour tortilla, 1/4 meat mixture, 1/4 cheese; repeat layers. (Should have 3-4 layers. I've found the more layers, the better).
Top with cheese. Bake at 375 for 30 minutes or until warm and bubbly.
Serves 4-6
