Broccoli Cornbread

This is another yummy recipe from the "south." Let's face it, I didn't even know what cornbread was until I met my husband...



Ingredients:
4 eggs
1 onion, chopped
1/2 stick butter
1 tsp salt
6oz cottage cheese
10oz pkg chopped broccoli
2 boxes Jiffy cornbread mix

Directions:
In a large bowl mix eggs, onion, butter, salt, and cottage cheese. Add broccoli and cornbread mixes; stir. Pour into a greased 9x13 inch pan and bake at 350 degrees for 45 minutes. Makes 15 servings.

*This makes a big batch... think Thanksgiving dinner. For everyday cooking, you might want to half the recipe and use an 8x8 pan.
