Ok, so...you need to make these. Go. Right now. I am pretty sure I'm ready to elect The Pioneer Woman for president. I've made 2 recipes of hers, and I'm sold. She is Queen. This lady knows how to cook! Oh, and by the way, I don't even like sweet potatoes!
Ingredients:
4 medium sweet potaoes
1 C sugar
1 C milk
2 eggs
1 tsp vanilla
1 tsp salt
Topping:
1 C brown sugar
1 C chopped pecans
1/2 C flour
3/4 stick butter
Directions:
Wash and bake sweet potatoes at 375 for 30-35min until fork tender. Slice open and scoop out the flesh into a bowl. Add sugar, milk, eggs, vanilla, & salt. Mash together. (If you have an old-school potato masher, great --chunky is good). Pour into casserole dish. In a separate bowl mix brown sugar, pecans, flour, & butter until crumbly. Sprinkle over potatoes. Bake at 400 for 30min. YUM!!
