Microwave Chewy Granola Bars
Ingredients:
1/4 Cup butter (or coconut oil)
1/3 Cup brown sugar
1/4 Cup honey
1/8 teaspoon salt
1/2 teaspoon vanilla
2 C quick oats
1 1/4 Rice Krispies cereal
3 Tablespoon mini chocolate chips
Directions:
Add butter, brown sugar, and honey to a 2 quart microwave safe bowl. Heat on high power for 1 minute. Stir until butter is melted. Return to microwave for 1-2 minutes longer. Carefully remove from microwave and blend in vanilla. Add quick oats and Rice Krispies and mix until evenly coated. Firmly press mixture into one side of buttered baking sheet (about 1/3 the width of baking sheet). Sprinkle with chocolate chips and press into bars. Chill in the freezer for 10 minutes. Remove and cut into 9 bars. Store in an airtight container.

*I added the chocolate chips to the mixture with the cereal. It ended up melting them (oops), so they were more "chocolate granola bars" than chocolate chip. I stored them in the freezer because they seemed to be more flimsy at room temperature. Like, they wouldn't hold their shape. They were yummy though!
