An ex-coworker brought this to work one time and I'm pretty sure she got it off Cooks.com. It's a nice "fresh" side if you are looking for something light & healthy. Easy to make too... of course! (FYI- I skipped the rice wine because I didn't have any. Still good.)
Ingredients:
2 large cucumbers, diced
6 plum tomatoes, diced
1 medium red onion, diced
2-3 tablespoons cilantro (depending on your taste)
1 packet of Ranch dressing powder
¼ cup rice wine
¼ cup rice vinegar

Directions:
Mix together and serve with chips. Also great as a salad.
